Your classic coconut macaroon just got a little greener.
These chewy spirulina coconut macaroons get their naturally vibrant blue-green colour from Niva’s Organic Spirulina Powder, adding a fun twist to a familiar favourite.
They’re naturally gluten-free, easy to make in one bowl and ready for the oven in under 30 minutes. Crispy around the edges, chewy in the middle and coconutty all the way through. Basically, dessert with a little green attitude.
This recipe makes about 20 macaroons and takes about 30 minutes start to finish, including bake time.
Ingredients
- 3 cups unsweetened shredded coconut
- ½ cup sweetened condensed milk (or coconut condensed milk)
- 2 large egg whites
- 1 teaspoon Niva Organic Spirulina Powder
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat and prep. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Mix the batter. In a large bowl, combine the shredded coconut, condensed milk, egg whites, spirulina powder, vanilla, and salt. Stir until evenly combined and the coconut is fully coated in green.
- Shape the macaroons. Scoop tablespoon-sized mounds onto the prepared baking sheet, packing each gently and spacing about 1 inch apart.
- Bake. Bake for 18-20 minutes, until the edges turn lightly golden.
- Cool completely. Let the macaroons cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool fully before serving.
Tip: For the most vibrant color, mix the spirulina powder into the condensed milk first until fully dissolved before folding in the coconut.
