This recipe makes about 16 energy balls and takes roughly 10 minutes of hands-on prep, plus 30 minutes to chill.
Ingredients
- 1 cup pitted Medjool dates, packed
- 1 cup rolled oats
- 2 tablespoons Niva Organic Moringa powder
- 1/3 cup creamy almond or peanut butter
- 2 tablespoons chia seeds
- 1 tablespoon honey or maple syrup
- Pinch of sea salt
- 1/4 cup shredded coconut or crushed pistachios, for coating
Instructions
- Blend the dates. Add the dates to a food processor and pulse until they form a sticky paste.
- Add the mix-ins. Add the oats, moringa powder, nut butter, chia seeds, honey, and salt. Process until the mixture comes together into a thick, moldable dough.
- Adjust the texture. If the dough is too dry, add a teaspoon of water or extra nut butter; if too wet, add a spoonful more oats.
- Shape the balls. Scoop out tablespoon-sized portions and roll into balls between your palms.
- Coat, if desired. Roll each ball in shredded coconut or crushed pistachios to coat.
- Chill and store. Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
