This easy moringa banana bread recipe combines ripe bananas with Niva Organic Moringa Powder for a moist, tender loaf with a subtle earthy flavour. It’s a simple way to use moringa powder in baking while giving a classic banana bread recipe a fresh twist. Comfort food, with a little green attitude.
This recipe makes one 9×5-inch loaf (about 10 slices) and takes roughly 1 hour 10 minutes start to finish, including bake time.
Ingredients
- 3 very ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup honey or brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups whole wheat or all-purpose flour
- 2 tablespoons Niva Organic Moringa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
Instructions
- Prep. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix the wet ingredients. In a large bowl, whisk together the mashed bananas, melted coconut oil, honey, eggs, and vanilla until smooth.
- Mix the dry ingredients. In a separate bowl, whisk together the flour, moringa powder, baking soda, salt, and cinnamon.
- Combine. Fold the dry ingredients into the wet ingredients until just combined — do not overmix.
- Add walnuts. Fold in the walnuts, if using, and pour the batter into the prepared loaf pan.
- Bake. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Cool. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Tip: Wrap cooled bread tightly and store at room temperature for up to 3 days, or freeze slices for up to 3 months.
